Hi there, and thanks for visiting my web site! I am Betsy Sheffield and live in Lafayette, a town between Boulder and Denver, Colorado. A Southern girl at heart, I was born and raised in Atlanta, GA, and have a unique love for homestyle buttery veggies (including mac and cheese, considered a vegetable in the South) and high-altitute organic locally-grown meats and produce.
My interest in health and wellness began in 2004 when I realized my meals of processed foods were the likely cause of my fatigue, moodiness, and tendency towards catching colds and illnesses. That realization began a journey of researching organic foods, the food industry, sustainability, and alternative ways of thinking about health. I moved from a diet of boxed meals to meals prepared from scratch at home, and regained health and energy in my life. A few years later I researched nutrition and fertility as my husband and I wished to have a child, and after her birth, I learned about nutritional sources for stabilizing the post-partum days. My passion is to help families through conception, pregnancy, post-partum, and toddlerhood find healthy meals to satisfy and nourish during these critical times. I also desire to help people find nutritional support for ailments they face, such as digestive issues, weak bones, fatigue, weight issues, amongst others. I look to the knowledge of traditional peoples as a guide for what works best in the human body. In my practice, I support people both through what foods are right for them, and also how their lifestyle and happiness affect their overall well being.
I received my training to practice Health Counseling at the Institute for Integrative Nutrition, which is the only nutrition school integrating all the different dietary theories—combining the knowledge of traditional philosophies with modern concepts like the USDA food pyramid, the glycemic index, ayurveda, and raw foods. I hold a bachelor's degree in Geology from Guilford College, a Master of Environmental Science from the College of Charleston (SC) and the Medical University of South Carolina, as well as a Certificate in Museum Studies from the University of Colorado at Boulder.
In addition to using food as a healing tool, I employ Emotional Freedom Techniques (EFT) as a method of jumping over emotional hurdles that prevent us from achieving our goals.
